Coconut Chocolate Cake (Gluten free)

We've had a few variations of this cake recently for various occasions and thought it was time to finally write it up, so as to reduce stress the next time it has to be made!

Ingredients:

  • 200g Ground coconut
  • 140g Ground almonds, alternatively 100g ground almonds and 40g almond flour
  • 6 eggs
  • 200g butter
  • 1 sachet vanilla sugar (\~12g)
  • 2 tsp. Baking powder
  • 200g dark chocolate flakes
  • 50g sugar

Instructions:

  1. Soften butter. 
  2. Add all ingredients except 40g of the chocolate flakes
  3. Put into buttered tin
  4. Bake for 40m at 140° (fan oven)
  5. When done, sprinkle the rest of the chocolate flakes while still hot
